baked sunday mornings: banana whoopie pies with milk chocolate swiss meringue buttercream

Banana Whoopie Pies | Solano's KitchenConfession time: when these showed up as this week’s Baked Sunday Mornings recipe, I wasn’t really thrilled.  I haven’t been keeping up with the baking schedule very well lately, and I knew that this week I would finally have a chance to bake whatever was up next.  Now that summer school has started, Fridays off = lots of time for baking! (as opposed to the things I really should be doing… like, you know, cleaning the house and getting the nursery ready).  I’ve missed a bunch of great looking recipes, so when I saw Banana Whoopie Pies, I felt kind of meh about it.  I mean, I like banana-flavored things, but they’re not all that exciting to me.  Daren usually enjoys them, however, and we had plenty of bananas laying around, so I forged ahead.

Luckily, I was way off in my initial reaction.  I loved these!! The fluffy cake-like cookies (cake? cookies? what exactly are whoopie pies??) taste like some of the most delicious banana bread I’ve ever had.  And the Swiss meringue buttercream… wow.  I tend to bake almost exclusively with dark chocolate, even when recipes call for milk chocolate, but I figured in this case the milk chocolate was probably a better match for the banana.  Good call there, because it was amazing.  Light, fluffy, not overly sweet with a delicate chocolate flavor.  Definitely a perfect pairing for the banana.  I’d call this one a huge success.

One small word of warning – the pies tend to be a little on the sticky side, so DON’T stack them the way I did in these pictures.  The cake will get all torn up… trust me :) Store them with sheets of parchment in between the layers and you should be good to go!

  1. I found the cookies so sticky as well! They stuck to the tupperware I stored them in, stuck to the plate I put them on, and stuck to each other! I’m in love with this milk chocolate swiss meringue filling. It was sooooo good.
