baked sunday mornings: chocolate cream cheese snacking cookies

Sorry everyone for the extended hiatus – Daren and I got married last weekend (HOORAY!!)  I just couldn’t get it together to write any posts before the wedding, and I really needed a week of doing nothing afterwards. But I’m back in action now, and I promise to go back to posting more regularly with no wedding craziness to stand in my way :)

The wedding, by the way, went wonderfully. Everything went exactly as planned, and we had a fantastic time! Thanks so much to all of our friends and family who were there to celebrate with us!! Once we get our professional pics back, I’ll share some of those here.  In the meantime, let’s get back to the food!

chocolate cream cheese cookies 2This week’s recipe on Baked Sunday Mornings was these chocolate cream cheese cookies.  They’re similar to the triple chocolate cookies I’ve made before, in that they have melted chocolate, cocoa powder, and chocolate chips in them; however, the addition of cream cheese in the batter really seemed to lighten up the taste and texture.  They’re soft and chewy, without being quite as dense as the triple chocolates.  You could definitely taste the cream cheese in the batter – it gave it a great tangy flavor – but a lot of that seemed to bake off in the oven.  Next time, I’d be curious to try increasing the amount of cream cheese and decreasing some of the butter; I think more of the cream cheese flavor would come through that way, giving it more of a unique taste.  Regardless, these were an easy cookie to make, and the texture and flavor is great as is.  To give it a try, head on over to Baked Sunday Mornings and check out the recipe!

  10. Congrats on getting married, Ali! So glad everything went well. Did you go on a honeymoon? Don’t worry, we won’t hold it against you for not posting– people have lives to tend to! ;-)

    Anyway, your cookies look a-mazing! I seriously want to eat those. I’m bummed that I didn’t have time to bake and blog this week. How did you get them to be so thick?

      Thanks Dafna! We’ll be going on a honeymoon a little later :)
      Not 100% sure how I got mine to stay nice and thick – I actually think leaving them in the oven a little longer kept them puffed up. I usually take cookies at as soon as they look even remotely set, but with these I noticed that if I left them in for an extra minute after they looked set then they didn’t collapse as much. Other than that didn’t change anything – only did a 15 minute chill, etc.
