Cranberry Brie Bites

Remember a few days ago when I told you we’d be putting those leftover sugared cranberries to good use?  Turns out, not only are they addicting all on their own, they taste great when paired with some soft brie cheese over a cracker!  Brie pairs excellently with fruits and berries, and these sugared cranberries are no exception.  Best of all, while this appetizer looks elegant and fancy, it takes no time at all to throw together.  You can make the cranberries days ahead of time, then right before the party just slice the brie and top the crackers.  It’s these kind of appetizers that make party planning and hosting so much simpler!

Cranberry Brie Bites 2

Ingredients

  • Crackers (your choice; we used pepper-cracked water crackers)
  • Brie cheese (I found a sliceable “log” of brie at Trader Joe’s, which made things even simpler!)
  • Sugared cranberries

Directions

Place the crackers on a serving platter.  Top each cracker with a thin slice of brie and 3 sugared cranberries.  Enjoy!
