Another great use for that homemade pita bread! In addition to hummus, we used ours for this Greek chicken salad. For this recipe, you can go all out, roast your own chicken and make your own tzatziki sauce (not necessarily difficult, but certainly more time consuming); or you can do what I did and buy a rotisserie chicken and use some store-bought tzatziki (Trader Joe’s makes a good one!) Using a couple store-bought ingredients turns this into an easy weeknight venture, with leftovers for lunches!
- 3 cups shredded, cooked chicken
- 1 small cucumber, diced
- 1 plum tomato, seeded & diced
- 1/2 cup red onion, finely chopped
- 1/4 cup kalamata olives, coarsely chopped
- 12 oz. tzatziki sauce
- salt & pepper
In a medium bowl, combine chicken, cucumber, tomato, onion, olives, & tzatziki sauce. Stir to thoroughly combine. Add salt & pepper to taste.
Notes: The amounts listed here can easily be adjusted to your tastes; this is just the way we prefer it. If you’d like to make your own sauce, Annie’s Eats has a recipe that I’ve used before.
Don’t forget to use the bones/scraps from your chicken (whether you used rotisserie or roasted your own) to make some chicken stock!
