Ever since reaching the 3rd trimester, the dessert cravings have hit. Hard. And more often than not, those cravings call for something cold, like ice cream… or sometimes water ice, or a popsicle. Instead of trying to ignore the cravings completely (which I’d never be able to do… come on) or giving in entirely, I’ve been trying to find some healthier – or at least less ridiculous – ways to satisfy them. With these popsicles, I think we’ve actually fallen solidly into the healthy side of things! Consisting mainly of strawberries and Greek yogurt, there’s not much to complain about ingredient-wise with these. Better for mommy, better for baby… and certainly better for mommy’s (nonexistent but will hopefully come back someday) waistline. Bonus – they’re light and refreshing, a little tangy from the yogurt, and overall a perfect summer snack!
- 2 cups coarsely chopped strawberries
- ¼ cup Greek yogurt (low fat or fat free works fine)
- 1½ teaspoons freshly squeezed lemon juice
- 1½ teaspoons vanilla extract
Combine all ingredients in a blender or food processor. Process until smooth (or you could leave some strawberry chunks in there – whatever works for you). Pour into a popsicle mold and freeze, adding the popsicle sticks after approximately 30 minutes.
Yield: 5-6 popsicles (my mold holds 10 popsicles, so you could easily double this recipe to fill it)
